The “Puntarelle” are the heart of CATALONIA CHICORY, a typical salad of our territory. We do the transplant in October and harvest the vegetable between January and February. Our women defoliate the plant and manually cut the "scattuni", i.e. the shoots, delicately leave them to cure to ripen for a few days, then they are taken and preserved in oil without the addition of aromas or spices.
