Sarawak Yellow Green Pepper Gr.90 - Maricha

This pepper is the fruit of an early harvest in the gardens of Sarikei, in the state of Sarawak, from well-maintained plants of the Utirancotta variety, from well-maintained plants aged between four and ten years. The fresh, ripe berries are showered with clean cold water and processed entirely without water, using six pressure cookers. When the pepper is still multicoloured, it is dried for 14 hours in a rudimentary low-temperature oven at 85°C. The entire work, carried out exclusively by Mr. Siew, is completed within twenty-four hours of harvesting and is unprecedented in the world.
