Malloreddus, also called Sardinian gnocchetti, are a typical Sardinian durum wheat semolina pasta. They have the shape of striped shells and are small in size.
Traditionally the dough, obtained by working durum wheat semolina with water, was first crushed between the fingers and then against the ends of a straw basket to give the pasta the thin lines that have always furrowed its surface.
Eticalimenta malloreddus are handcrafted and bronze drawn. Bronze drawing makes the grooves more pronounced and the pasta particularly porous, allowing it to capture and retain seasonings better.
Always the most prepared traditional dish in Sardinia on the occasion of important anniversaries, malloreddus pair well with any type of red and white sauce, even spicy ones. Their pot-bellied shape allows them to collect the ragù, with which they are typically seasoned.
