For our puree we use only fresh tomatoes grown in the open field. We harvest the tomatoes one by one in July and August and process them a few hours after harvesting. We adopt a slow and gentle processing system, with lower yields, but with excellent results: the red of the tomato remains lively and bright, the taste is that of the purees you found in your grandmothers' pantries, the consistency is full-bodied, compact and dense. We do not add salt, but only a very fresh basil leaf.
They were the first tomatoes to arrive from the Americas, hence the name "golden apple", due precisely to the yellow color. It is a truly special tomato, for its colour, for its composition (contains carotenoids, flavonoids and vitamin C) and for its structure: the particularly thick skin allows you to obtain a very dense puree! But this tomato also hides a secret: it has no acidity, this makes our puree a real gem in the kitchen, it will allow you to create a perfect combination even with fish-based dishes.
