HARVEST
2013. Winter with frequent snowfall, but rather mild. Rainy and very cold spring. First phases of the vine cycle marked by these meteorological obstacles: late budding and reduced bud fertility. Flowering took place at the beginning of June, always accompanied by unfavorable weather conditions. From mid-April to the second ten days of June it rained every 2 days, but with the arrival of summer the weather radically changed and we moved on to the extreme weather of recent years, with highs that approached 40°C . Storms arrived at fairly regular intervals to quench the thirst of the vines. When the grapes were ready for harvest, after August, abundant rain heavily marked the vintage. After many years we saw the gray mold again which made it necessary to sort the bunches both in the countryside and in the cellar. Never like this year has our grape sorting and washing plant been crucial in changing the face of this apparently difficult Vintage, but which we have made valuable.
The harvest took place on August 26th with an average yield per hectare of 7,700 kilograms of grapes, equivalent to 3,460 liters of wine (yield in wine: 45%).

WINEMAKING
The Cuvée Annamaria Clementi Rosé is the maximum expression of pure Pinot Noir vinified in pink, in Ca' del Bosco style. The grapes, in compliance with our winemaking method, are harvested by hand in small boxes, are promptly coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying. For destemming, the bunches are transferred over the vat and then fall there by gravity. This eliminates traditional pumping systems, which cause breakage of the skins and unwanted herbaceous notes. This is followed by a brief maceration of the grapes at a temperature of 14°C to obtain that particular intense pink color and that aromatic profile of extreme finesse and harmony that will characterize the Cuvée Annamaria Clementi Rosé in the bottle. All the vinification phases of the different base wines take place in small oak barrels obtained from selected wood and seasoned for at least 3 years and stored in deep, cool underground cellars. Alcoholic fermentation, malolactic fermentation and barrel aging last a total of 8 months. The Cuvée Annamaria Clementi Rosé was born from the art of knowing how to assemble base wines from the 3 historic vineyards by selecting only the wine from the best barrels. It is tapped by gravity and a pair of flying tanks transfer it by gravity, from the barrels to the assembly tank. At least a further 8 years of aging on the yeasts are needed to achieve that olfactory harmony and excellent taste balance that make the Cuvée Annamaria Clementi Rosé a supreme Franciacorta. Dégorgement occurs in the absence of oxygen, using a system unique in the world, designed and patented by Ca' del Bosco. This avoids oxidative shock and further additions of sulphites and makes our Franciacorta purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.
