Harvest
2015. The winter was characterized by temperatures much higher than the average for the period and by high rainfall in the months of November and December. This hot season led to an advance in the vegetative cycle, with an above-average release of bunches. In the month of May and in the first ten days of June, there were limited but frequent rainfall events and the temperatures of the period always remained above average. We have therefore suffered a high pressure of fungal diseases (powdery mildew and downy mildew). From mid-June, the heat finally made itself felt and, until the end of July, a sultry and dry climate continued. Towards the end of the month, emergency irrigation interventions were even necessary on the vineyards most in difficulty. After mid-August, with the harvest having just begun, the rain finally arrived, allowing the grapes to reach optimal ripeness. An early vintage that reveals itself in Franciacorta for its notable structure and aromatic intensity, without ever giving in to elegance. Yield per hectare of 7,600 kilograms of grapes, equivalent to a wine yield of 2,900 liters (38% yield).
Winemaking
Annamaria Clementi is the fruit of the search for excellence, both in the vineyard and in the cellar. In compliance with the Ca' del Bosco Method, the grapes, harvested by hand in small boxes, are promptly coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying. The base wines are obtained exclusively from very first pressing musts. The alcoholic fermentation takes place in small oak barrels made with selected wood and seasoned for at least 3 years. Here it remains on its yeasts for another 6 months, also carrying out the malolactic fermentation. No compromise, no concession: only the wine from the best barrels, of the 25 base wines of origin, is tapped to give rise to Annamaria Clementi. A pair of flying tanks transfer the base wines by gravity from the barriques to the assembly tank. This is followed by bottling and a very long refinement in contact with yeasts, which lasts for more than 8 years to make its profile unique: an absolute Franciacorta. Dégorgement occurs in the absence of oxygen, using a system unique in the world, designed and patented by Ca' del Bosco. This avoids oxidative shock and further additions of sulphites and makes our Franciacorta purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.
