The 2021 vintage was characterized by a generally cold winter and a generally regular spring. At the beginning of April, after budding had already begun, a sudden drop in temperatures caused a reduction in production, without in any way affecting the future quality of the grapes, as well as a vegetative delay of approximately two weeks. A May with little rain but at the same time cool and a summer with sunny days, characterized by a good temperature range between day and night, allowed the vines to catch up and guarantee the correct ripening of the bunches. The good weather starting from August allowed us to carefully select the best grapes, choosing the moment of harvesting in order to seek the maximum expression of the varietal aromas. The Chardonnay harvest for Cervaro della Sala, considered to be of exceptional quality but characterized by reduced production, began during the third week of August with healthy, ripe grapes characterized by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place after about fifteen days, around mid-September.
