Carloforte red tuna buzzonaglia is made up of the parts of the fillet in contact with the central bone.
Appreciated for its softness, it is also used to season pasta, sometimes together with dried cherry tomatoes. Its flavor is more intense than that of common tuna in oil, so buzzonaglia, in the form of an appetizer, is often served with cannellini beans, Tropea onion, a little olive oil and a pinch of salt.
