Winemaking
Manual selection of the best bunches and subsequent drying for approximately 100 days, with a weight loss of approximately 40%. Subsequent pressing and long fermentation with maceration.
Aging
24 months in 500 l French oak tonneaux; followed by 18 months in medium-large Slavonian oak barrels. Bottle aging for 12 months.

Organoleptic characteristics
Intense garnet red in color, it has an ethereal scent of dried fruit. On the palate it is full-bodied, warm, enveloping, dry. An important wine of rare elegance, it lends itself well to ageing.

Suitable with robust second courses of red meats such as braised meats and game, excellent with mature cheeses.
