Established at the Research Center of SA.PI.SE. in 2004, it entered the market in 2006. It is protected by community patent rights (European Patent) in favor of SA.PI.SE. (EU4481/1999). In 2008 the “Ermes Rice Supply Chain” was established with the release of a specific membership logo, a supply chain of which Tenuta Castello is an official affiliate.
The red color of the pericarp is linked to the presence of anthocyanins. It has nutritional values ​​and antioxidant power similar to those of the Venere black rice variety, but has a shorter cooking time. This type of rice was created by crossing Venere rice with an elongated grain rice using natural techniques and is cultivated only in the provinces of Vercelli and Pavia. Thanks to its delicate aroma, Ermes rice is very versatile and can be used both in salads with cooked vegetables or white meats or simply with a drizzle of oil.
