Acquapazza Gourmet Anchovy Colatura, 50 ml bottle .

Traditional colatura obtained from anchovies caught in the Gulf of Salerno between Capri and Punta Licosa, salted and left to mature for approximately 18 months.

The colatura comes from anchovies caught mainly in spring, salted and aged for 18 months in chestnut barrels. The colatura is the precious liquid that is made to 'drip' from a hole in the bottom of the barrels: it is all that remains of the anchovies after the long maturation, apart from the bone and the skin which remain in the bottom of the barrel

Acquapazza Gourmet is a small artisan company founded in the center of Cetara by three partners united by a passion for the tradition linked to seafood and in particular for the processing of one of the symbolic products of the town: Colatura di Alici
